Created this monstrosity for a weekend at Nate's, and ended up having it as the perfect tailgating food when we watched the game. It has boneless pork rib meat cooked in onion and jalapeño juice, mexican sour cream, contigo, refried beans, and the jalapeño and onion layer topped with cilantro. This was a great dish that I was very pleased with, although I would replace the jalapeño peppers with Serrano peppers next time to give it more heat; the jalapeño peppers had no impact on the dish!
