Using a muffin tin is probably the best way to keep it all together, but its delicious even if its falling apart!Mix the dough by hand and precook the bacon. The dough should be crumbly yet it should stick together; the bacon shouldn't be cooked all the way through, just browned. I microwaved the cheddar cheese and cottage cheese to mix it together, and then mixed the eggs with the cheese.One of the best ways to form the muffin part of the quiche is to form it in a muffin tin with seran wrap over it. With pam in the muffin tin, drop in the bottom part of the quiche. Put the ingredients in the quiche muffin, with the drier ingredients first. The spinach, bacon, and salsa form a great center with the egg mixture poured over the top. I modified the recipe after making it again; I found that adding an egg and some extra flour to the dough mix really helps it stay together and gives it a nice, golden brown color!
