An extremely easy oven baked quiche recipe surprised me with how flavorful it could be! I filled a muffin pan with sausage chunks, spinach, and salsa and then poured in a mix of eggs, ricotta cheese, and cheddar cheese. The dough was a very simple milk, flour, butter, and salt mix that lined the bottoms and up the sides. These freeze really well and it only takes 30-40 seconds in the microwave for breakfast! Next time I make these I will try to figure out a better way to use the muffin wrappers; the wrapper sticks too much to the quiche if you leave it untreated. Maybe I will line the muffin wrapper with flour so that it doesn’t stick from the egg mix.
